Gibon is a neighborhood bistro nestled in the heart of the 11th district of Paris, born from the collaboration of three friends eager to create a friendly and relaxed venue.
The decor is simple and welcoming, providing an intimate setting where guests feel at ease. Gibon's cuisine, much like its decor, is simple yet delicious and generous. The chef showcases seasonal products, prepared with care. Additionally, the bistro offers a wine cellar, allowing customers to discover a wide variety of wines.
After gaining experience in various restaurants in Paris, the provinces, and abroad, Léa and Harold, who met at hotel school, opened the Gibon restaurant, their small wine bar, last October.
The Gibon restaurant is a discreet venue with around thirty covers, complementing its soon-to-be hundred references of wines with small bistro dishes, as the lively 11th arrondissement of Paris does so well. The dish titles are simply listed, making them easy to read. However, in the plate, chefs Mats and Paul use the simplicity of ingredients to create original and refined recipes.
The menu changes weekly to ensure the freshest products. Therefore, you will have to return several times to discover all the delights of Chef Mats, formerly the executive chef at Fulgurance!
Among the dishes, you can enjoy a creamy butternut squash soup with a perfect egg, chives, and hazelnut butter as an appetizer, a pearly cod accompanied by cauliflower puree as the main course, and a delicious chocolate mousse with salt and olive oil to finish your meal smoothly, but also with a touch of originality!
You will understand that the Gibon restaurant is a real gem in Paris 11, very close to the Voltaire metro station and in the heart of the bustling neighborhood!
